Today's Theme- PASTA!!!!
Crab & Pasta Salad
6oz. Vermicelli
2 TBS. Oriental Sesame or Peanut Oil
1 Med. Sweet Red Pepper
2 cloves garlic, minced
3 green onions, sliced thin
6 oz. fresh, thawed crabmeat (imitation is fine)
1 sm. head romaine lettuce, torn
2 TBS. reduced sodium soy sauce
2 TBS. red wine vinegar
1 TBS. white wine
1/2 tsp. sugar
1/8 tsp. cayenne pepper (may be omitted if you don't want to spicy)
Directions:
1. Cook vermicelli according the the pkg. Drain and transfer to a serving bowl.
2. Meanwhile, heat 1 Tbs. of sesame oil in a heavy 10in skillet over med high heat for 1 min; add the red pepper and garlic and stir fry just until limp- about 3 min. Add the green onions and stir fry 30 sec longer.
3. Combine the vermicelli, red pepper-green onion mixture, crabmeant an dlettuce in a large bowl. In a small bowl whisk together the remaining sesame oil and soy sauce, vinegar, wine, sugar and cayenne pepper. Pour over pasta and toss gently.
***This is my FAVORITE recipe from my Dad...it's sooo yummy and really pretty simple :) Hope you enjoy!
